Just in time for Christmas Key Lime Cake

Cake: Christmas Key Lime Cake

One  three ounce package lime flavored gelatin
1 1/3 cup granulated sugar
2 cups sifted all-purpose flour
1/2 teaspoon salt
1 teaspoon baking power
1 teaspoon baking soda
1 1/2 cups vegetable oil
3/4 cups orange juice
1 tablespoon lemon juice
1/2 teaspoon vanilla extra
5 large eggs, slightly beaten                                                          

Glaze:
1/2 cup key lime juice or use 4 limes
1/2 cup confectioners’ sugar

Icing:
One 1/2 cup (1 stick butter)
One 8-ounce package cream cheese, room temp
One pound box confectioners’ sugar                                                                                                                                   

Directions:
For cake Preheat oven to 325 degrees F and spray two 9-inch round cake pans.
In a large mixing bowl, mix the gelatin, granulate sugar, flour, salt, baking power and baking soda.
Stir to mix well.
Add the oil, orange juice, lemon juice, vanilla, and eggs. Mix well combine.
Pour batter evenly in two pans and bake for 30 to 40 min.cool cakes on rake for 5 min.
Then turn on a cooling rack.

For glaze:
While the cake is still hot, mix lime juice and confectioners’ sugar together well.
Pierce the cake with a fork and pour glaze over both cakes let cool then prepare icing.
Cream the butter and cream cheese.
Beat the confectioner’s sugar until mixture is smooth and easy to spread
add 1/2 teaspoon of vanilla and 1/2 teaspoon of key lime juice mix well.
Spread the icing on the top and sides of the cake.
