This is a simple stolen, quick bread for first time bread makers..
2 1/2 c all-purpose flour
1/2 c sugar
1/4 tsp. salt
1/2 c. cold butter or margarine 1 stick
1 c. part-skim ricotta cheese
1 c. dried cherries or other dried fruit chopped
1/3 c. pecans, toasted and chopped
1 tsp. vanilla extract
1/2 tsp. grated fresh lemon peel
2 lg. eggs
Preheat oven to 325 F.
Grease large cookie sheet.
In large bowl, stir together flour, sugar, baking power, and 1/4 tsp. salt.
With pastry blend, cut in butter until mixture resembles fine crumbs.
Stir in ricotta, dried cherries,pecans, vanilla, lemon peel, and eggs until well combine.
Turn dough onto lightly floured surface.With floured hands, gently knead dough two
or three times to blend.
With floured rolling pin, roll dough into 10′ by 8′ oval.
Fold oval lengthwise, bringing top half over so that bottom of dough extends by about 1 inch.
Place stolen on prepared cookie sheet.
Bake 55 to 60 min. or until toothpick insert in center comes out clean. Let cool then sprinkle with confectioner’s sugar to coat just before serving.
